Ingredients

  • jumbo pasta shells - 8 pieces
  • ricotta cheese - 200 grams
  • fresh spinach - 100 grams
  • mozzarella cheese - 100 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • egg - 1 large
  • garlic - 2 cloves, minced
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • dried oregano - 1/2 teaspoon
  • marinara sauce - 300 grams
  • olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cook the jumbo pasta shells in a large pot of salted boiling water for 8-10 minutes until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat, add minced garlic and sauté for 1 minute until fragrant.
  4. Add fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  5. In a mixing bowl, combine ricotta cheese, half of the shredded mozzarella, Parmesan cheese, egg, sautéed spinach, salt, black pepper, and oregano. Mix well until combined.
  6. Fill each cooked pasta shell with the cheese and spinach mixture. Place the stuffed shells in a baking dish.
  7. Pour marinara sauce evenly over the stuffed shells and sprinkle the remaining mozzarella on top.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
