Ingredients
- Brown lentils - 150 grams
- Onion - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Garlic - 2 cloves, minced
- Tomato sauce - 200 grams
- Ketchup - 2 tablespoons
- Worcestershire sauce (vegetarian) - 1 tablespoon
- Brown sugar - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Whole grain hamburger buns - 2
- Fresh parsley - for garnish
Steps
- Rinse the brown lentils under cold water and then cook them in a pot with 500ml of water. Bring to a boil, then reduce heat and simmer for 20 minutes or until tender. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and green bell pepper, and sauté for about 5 minutes until softened.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the cooked lentils, tomato sauce, ketchup, Worcestershire sauce, brown sugar, smoked paprika, cumin, salt, and black pepper. Mix well and let simmer for 5-10 minutes to allow the flavors to meld.
- While the mixture is simmering, toast the whole grain hamburger buns until golden brown.
- Spoon the lentil mixture onto the bottom half of each bun. Garnish with fresh parsley and top with the other half of the bun.
