- Green lentils - 100 grams
- Carrots - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Frozen peas - 50 grams
- Vegetable broth - 300 ml
- Olive oil - 1 tablespoon
- Soy sauce - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Rosemary - 1 teaspoon, dried
- Potatoes - 300 grams, peeled and cubed
- Butter - 1 tablespoon
- Milk - 50 ml
- Salt - to taste
- Pepper - to taste
Steps
- Preheat your oven to 200°C (392°F).
- In a pot, boil the cubed potatoes in salted water for about 15 minutes, or until tender. Drain and mash with butter and milk until smooth. Set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion, diced carrots, and celery, sautéing for about 5 minutes until softened.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the green lentils, vegetable broth, soy sauce, thyme, and rosemary to the skillet. Bring to a simmer, then reduce the heat and let it cook for about 25 minutes until the lentils are tender and the liquid is mostly absorbed.
- Fold in the frozen peas and season with salt and pepper to taste.
- Transfer the lentil mixture to a small baking dish and spread the mashed potatoes evenly on top.
- Place the dish in the oven and bake for 15 minutes, or until the top is slightly golden.
- Remove from the oven and let it cool for a few minutes before serving.
