- Red bell pepper - 1, diced
- Zucchini - 1, diced
- Corn kernels - 1 cup, fresh or frozen
- Red onion - 1/2, diced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Avocado - 1, sliced
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, for juice
- Feta cheese - 1/4 cup, crumbled (optional)
Steps
- Heat olive oil in a large skillet over medium heat. Add the diced red onion and minced garlic, sautéing for 2-3 minutes until fragrant.
- Add the diced red bell pepper and zucchini, and cook for another 5 minutes until they begin to soften.
- Stir in the corn, black beans, cumin, chili powder, salt, and black pepper. Cook for an additional 5-7 minutes, stirring occasionally, until everything is heated through.
- While the vegetables are cooking, preheat the oven to 180°C (350°F) and place the corn tostadas on a baking sheet. Bake for 5-7 minutes until they are crispy.
- Once the vegetables are ready, remove them from the heat and squeeze fresh lime juice over the mixture.
- To assemble, place a generous portion of the vegetable mixture on each tostada. Top with avocado slices, crumbled feta cheese (if using), and chopped cilantro.
