  • Cornstarch - 1/4 cup (30 grams)
  • Baking powder - 1 teaspoon
  • Cold sparkling water - 1 cup (240 ml)
  • Salt - 1/2 teaspoon
  • Vegetable oil - for frying

Steps

  1. Prepare the vegetables by cutting the zucchini, carrot, and bell pepper into thin strips, slice the mushrooms, and trim the green beans.
  2. In a bowl, mix the all-purpose flour, cornstarch, baking powder, and salt.
  3. Slowly add the cold sparkling water to the flour mixture, stirring until just combined. The batter should be slightly lumpy.
  4. Heat vegetable oil in a deep frying pan or pot over medium heat until hot (about 180°C or 350°F).
  5. Dip each vegetable piece into the batter, allowing excess to drip off, then carefully place them in the hot oil.
