  • Carrot - 1 medium, julienned
  • Red bell pepper - 0.5, julienned
  • Green onion - 2, chopped
  • Avocado - 1 medium, sliced
  • Sesame seeds - 1 tablespoon
  • Soy sauce - for serving

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
  4. In a small bowl, mix the rice vinegar, sugar, and salt until dissolved.
  5. Once the rice is cooked, remove it from heat and let it sit covered for 5 minutes.
  6. Fluff the rice with a fork and gently mix in the vinegar mixture until evenly coated.
  7. Allow the rice to cool slightly while you prepare the vegetables.
  8. On a serving plate, arrange the cucumber, carrot, red bell pepper, and avocado on top of the sushi rice.
  9. Sprinkle with chopped green onion and sesame seeds.
