Ingredients

  • Jumbo pasta shells - 12 pieces
  • Ricotta cheese - 200 grams
  • Spinach - 100 grams, chopped
  • Mushrooms - 100 grams, diced
  • Red bell pepper - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Parmesan cheese - 50 grams, grated
  • Mozzarella cheese - 100 grams, shredded
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Marinara sauce - 250 grams
  • Fresh basil - 2 tablespoons, chopped (optional)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Cook the jumbo pasta shells in a large pot of salted boiling water for about 8-10 minutes, or until al dente. Drain and set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  4. Add the chopped spinach, diced mushrooms, and red bell pepper to the skillet. Cook for about 5-7 minutes until the vegetables are softened. Season with salt and pepper.
  5. In a mixing bowl, combine the cooked vegetable mixture with ricotta cheese, half of the grated Parmesan cheese, and fresh basil if using. Mix well until combined.
  6. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  7. Stuff each cooked pasta shell with the vegetable and cheese mixture and arrange them in the baking dish.
  8. Pour the remaining marinara sauce over the stuffed shells and sprinkle the shredded mozzarella cheese and remaining Parmesan cheese on top.
  9. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  10. Allow to cool for a few minutes before serving. Enjoy your delicious vegetable stuffed shells!
