  • Celery, diced - 1 stalk (about 50g)
  • Red bell pepper, diced - 1 medium (about 120g)
  • Zucchini, diced - 1 medium (about 150g)
  • Cauliflower florets - 1 cup (about 100g)
  • Vegetable broth - 3 cups (720ml)
  • Dried thyme - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Spinach, fresh - 1 cup (about 30g)
  • Lemon juice - 1 tablespoon

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  3. Stir in the carrots, celery, and red bell pepper, cooking for another 5 minutes until they begin to soften.
  4. Add the zucchini, cauliflower, vegetable broth, thyme, oregano, salt, and black pepper to the pot.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes, or until all vegetables are tender.
  6. Stir in the fresh spinach and lemon juice, cooking for an additional 2 minutes until the spinach is wilted.
