  • Zucchini - 100 grams, grated
  • Carrot - 50 grams, grated
  • Red bell pepper - 50 grams, finely chopped
  • Chickpeas - 100 grams, cooked and mashed
  • Breadcrumbs - 50 grams
  • Egg - 1 large
  • Garlic - 1 clove, minced
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Slider buns - 2 units
  • Lettuce - 2 leaves
  • Tomato - 1 slice

Steps

  1. In a mixing bowl, combine the grated zucchini, grated carrot, chopped red bell pepper, mashed chickpeas, breadcrumbs, egg, minced garlic, cumin, salt, and black pepper. Mix until well incorporated.
  2. Form the mixture into two equal-sized patties.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and cooked through.
  4. While the patties are cooking, lightly toast the slider buns in the remaining olive oil.
  5. Assemble the sliders by placing a lettuce leaf and a slice of tomato on each bun, followed by the cooked vegetable patty.
