- Zucchini - 100 grams, grated
- Carrot - 50 grams, grated
- Red bell pepper - 50 grams, finely chopped
- Chickpeas - 100 grams, cooked and mashed
- Breadcrumbs - 50 grams
- Egg - 1 large
- Garlic - 1 clove, minced
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Slider buns - 2 units
- Lettuce - 2 leaves
- Tomato - 1 slice
Steps
- In a mixing bowl, combine the grated zucchini, grated carrot, chopped red bell pepper, mashed chickpeas, breadcrumbs, egg, minced garlic, cumin, salt, and black pepper. Mix until well incorporated.
- Form the mixture into two equal-sized patties.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and cooked through.
- While the patties are cooking, lightly toast the slider buns in the remaining olive oil.
- Assemble the sliders by placing a lettuce leaf and a slice of tomato on each bun, followed by the cooked vegetable patty.
