- Cheddar cheese - 150 grams, shredded
- Cream cheese - 50 grams, softened
- Milk - 120 ml
- Red bell pepper - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Corn - 100 grams, frozen or canned
- Black beans - 100 grams, rinsed and drained
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Fresh cilantro - for garnish
Steps
- In a medium skillet, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Stir in the diced red and green bell peppers, and cook for another 5 minutes until they soften.
- Add the corn and black beans to the skillet, and mix well.
- Sprinkle in the cumin, chili powder, and salt, stirring to combine.
- Reduce the heat to low, then add the cream cheese and shredded cheddar cheese to the skillet.
- Slowly pour in the milk, stirring continuously until the cheeses melt and the mixture becomes creamy.
- Cook for an additional 5 minutes, stirring occasionally to prevent sticking.
- Remove from heat and let it sit for a minute before serving.
- Garnish with fresh cilantro and serve warm with gluten-free tortilla chips.
