Ingredients

  • Cheddar cheese - 150 grams, shredded
  • Cream cheese - 50 grams, softened
  • Milk - 120 ml
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Corn - 100 grams, frozen or canned
  • Black beans - 100 grams, rinsed and drained
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh cilantro - for garnish

Steps

  1. In a medium skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced red and green bell peppers, and cook for another 5 minutes until they soften.
  4. Add the corn and black beans to the skillet, and mix well.
  5. Sprinkle in the cumin, chili powder, and salt, stirring to combine.
  6. Reduce the heat to low, then add the cream cheese and shredded cheddar cheese to the skillet.
  7. Slowly pour in the milk, stirring continuously until the cheeses melt and the mixture becomes creamy.
  8. Cook for an additional 5 minutes, stirring occasionally to prevent sticking.
  9. Remove from heat and let it sit for a minute before serving.
  10. Garnish with fresh cilantro and serve warm with gluten-free tortilla chips.
