Vegetable Quesadillas

- Flour Tortillas - 4 pieces
- Olive Oil - 2 tablespoons
- Red Bell Pepper - 1 medium, diced
- Green Bell Pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Red Onion - 1 small, diced
- Spinach - 2 cups, fresh
- Shredded Cheddar Cheese - 1 cup
- Shredded Mozzarella Cheese - 1 cup
- Cumin Powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black Pepper - 1/4 teaspoon
Steps
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the diced red and green bell peppers, zucchini, and red onion to the skillet. Sauté for about 5 minutes until they begin to soften.
- Stir in the spinach, cumin powder, salt, and black pepper. Cook for an additional 2-3 minutes until the spinach wilts. Remove the mixture from the skillet and set aside.
- Wipe the skillet clean and return it to the heat. Add a small amount of olive oil if necessary.
- Place one tortilla in the skillet and sprinkle half of the shredded cheddar and mozzarella cheese over half of the tortilla.
- Add half of the vegetable mixture on top of the cheese, then fold the tortilla in half.
- Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
- Repeat the process with the second tortilla and remaining ingredients.
- Remove from the skillet, cut into wedges, and serve hot.
