- Chickpea flour - 100 grams
- Water - 120 ml
- Cumin seeds - 1 teaspoon

- Red chili powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Carrot - 1 medium, grated
- Potato - 1 medium, thinly sliced
- Spinach - 50 grams, chopped
- Onion - 1 small, thinly sliced
- Green chili - 1, finely chopped
- Baking soda - 1/4 teaspoon
- Vegetable oil - for frying
Steps
- In a mixing bowl, combine chickpea flour, cumin seeds, coriander powder, turmeric powder, red chili powder, and salt.
- Gradually add water to the flour mixture to form a smooth batter; it should be thick enough to coat the vegetables.
- Add grated carrot, sliced potato, chopped spinach, sliced onion, chopped green chili, and baking soda to the batter. Mix until all vegetables are well-coated.
- Heat vegetable oil in a deep frying pan over medium heat.
- Once the oil is hot, drop spoonfuls of the vegetable batter mixture into the oil, being careful not to overcrowd the pan.
- Fry the pakoras until they are golden brown and crispy, about 4-5 minutes, turning occasionally.
- Using a slotted spoon, remove the pakoras and drain them on paper towels to remove excess oil.
- Serve hot with your favorite chutney or sauce.
