Ingredients

  • Chickpea flour - 100 grams
  • Water - 120 ml
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Carrot - 1 medium, grated
  • Potato - 1 medium, thinly sliced
  • Spinach - 50 grams, chopped
  • Onion - 1 small, thinly sliced
  • Green chili - 1, finely chopped
  • Baking soda - 1/4 teaspoon
  • Vegetable oil - for frying

Steps

  1. In a mixing bowl, combine chickpea flour, cumin seeds, coriander powder, turmeric powder, red chili powder, and salt.
  2. Gradually add water to the flour mixture to form a smooth batter; it should be thick enough to coat the vegetables.
  3. Add grated carrot, sliced potato, chopped spinach, sliced onion, chopped green chili, and baking soda to the batter. Mix until all vegetables are well-coated.
  4. Heat vegetable oil in a deep frying pan over medium heat.
  5. Once the oil is hot, drop spoonfuls of the vegetable batter mixture into the oil, being careful not to overcrowd the pan.
  6. Fry the pakoras until they are golden brown and crispy, about 4-5 minutes, turning occasionally.
  7. Using a slotted spoon, remove the pakoras and drain them on paper towels to remove excess oil.
  8. Serve hot with your favorite chutney or sauce.
