- Garlic - 1 clove
- All-purpose flour - 3 tablespoons
- Egg - 1 large
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 4 tablespoons
- Sour cream - for serving (optional)
- Applesauce - for serving (optional)
Steps
- Grate the zucchini, carrot, and onion using a box grater or food processor. Place them in a clean kitchen towel and squeeze out excess moisture.
- Finely chop the garlic and add it to the grated vegetables in a mixing bowl.
- Add the flour, egg, salt, and pepper to the bowl and mix until well combined.
- Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat.
- Spoon about 2 tablespoons of the vegetable mixture into the skillet for each latke, flattening them slightly with the back of a spatula.
- Cook for about 3-4 minutes on each side, or until golden brown and crispy. Repeat with remaining oil and mixture.
- Remove latkes from the skillet and drain on paper towels. Serve hot with sour cream and applesauce, if desired.
