Ingredients

  • Zucchini - 150 grams
  • Carrot - 100 grams
  • Onion - 50 grams
  • Garlic - 1 clove
  • All-purpose flour - 3 tablespoons
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 4 tablespoons
  • Sour cream - for serving (optional)
  • Applesauce - for serving (optional)

Steps

  1. Grate the zucchini, carrot, and onion using a box grater or food processor. Place them in a clean kitchen towel and squeeze out excess moisture.
  2. Finely chop the garlic and add it to the grated vegetables in a mixing bowl.
  3. Add the flour, egg, salt, and pepper to the bowl and mix until well combined.
  4. Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat.
  5. Spoon about 2 tablespoons of the vegetable mixture into the skillet for each latke, flattening them slightly with the back of a spatula.
  6. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Repeat with remaining oil and mixture.
  7. Remove latkes from the skillet and drain on paper towels. Serve hot with sour cream and applesauce, if desired.
