Ingredients

  • Lasagna noodles - 4 sheets
  • Olive oil - 2 tablespoons
  • Zucchini - 100 grams, sliced
  • Bell pepper - 100 grams, diced
  • Mushrooms - 100 grams, sliced
  • Spinach - 100 grams, fresh
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Ricotta cheese - 125 grams
  • Mozzarella cheese - 100 grams, shredded
  • Parmesan cheese - 30 grams, grated
  • Marinara sauce - 200 grams
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until translucent.
  3. Add sliced zucchini, diced bell pepper, and mushrooms to the skillet. Cook for about 5 minutes until vegetables are tender.
  4. Stir in fresh spinach and cook until wilted. Season with oregano, salt, and black pepper. Remove from heat.
  5. In a bowl, mix ricotta cheese with a pinch of salt and pepper.
  6. In a baking dish, spread a layer of marinara sauce on the bottom. Place 2 lasagna noodles on top.
  7. Spread half of the ricotta mixture over the noodles, followed by half of the sautéed vegetable mixture.
  8. Sprinkle a layer of mozzarella cheese over the vegetables and add another layer of marinara sauce.
  9. Repeat the layering with the remaining noodles, ricotta, vegetables, marinara, and top with the remaining mozzarella and grated Parmesan cheese.
  10. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  11. Remove the foil and bake for another 10-15 minutes until the cheese is bubbly and golden.
  12. Let it cool for a few minutes before slicing and serving.
