Ingredients
- Lasagna noodles - 4 sheets
- Olive oil - 2 tablespoons
- Zucchini - 100 grams, sliced
- Bell pepper - 100 grams, diced
- Mushrooms - 100 grams, sliced
- Spinach - 100 grams, fresh
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Ricotta cheese - 125 grams
- Mozzarella cheese - 100 grams, shredded
- Parmesan cheese - 30 grams, grated
- Marinara sauce - 200 grams
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until translucent.
- Add sliced zucchini, diced bell pepper, and mushrooms to the skillet. Cook for about 5 minutes until vegetables are tender.
- Stir in fresh spinach and cook until wilted. Season with oregano, salt, and black pepper. Remove from heat.
- In a bowl, mix ricotta cheese with a pinch of salt and pepper.
- In a baking dish, spread a layer of marinara sauce on the bottom. Place 2 lasagna noodles on top.
- Spread half of the ricotta mixture over the noodles, followed by half of the sautéed vegetable mixture.
- Sprinkle a layer of mozzarella cheese over the vegetables and add another layer of marinara sauce.
- Repeat the layering with the remaining noodles, ricotta, vegetables, marinara, and top with the remaining mozzarella and grated Parmesan cheese.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for another 10-15 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before slicing and serving.
