  • Mushrooms - 200 grams, whole or halved if large

  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Skewers - 4 (if wooden, soaked in water for 30 minutes)

Steps

  1. In a large bowl, combine olive oil, garlic powder, paprika, oregano, salt, and black pepper to create a marinade.
  2. Add the red bell pepper, zucchini, red onion, cherry tomatoes, and mushrooms to the marinade, tossing until all vegetables are well coated.
  3. Cover the bowl with plastic wrap and let the vegetables marinate for at least 15 minutes.
  4. Preheat a grill or grill pan over medium-high heat.
