  • Zucchini - 100 grams, grated
  • Carrot - 100 grams, grated
  • Corn kernels - 50 grams
  • Red bell pepper - 50 grams, finely chopped
  • Green onions - 2, finely chopped
  • All-purpose flour - 50 grams
  • Chickpea flour - 30 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - for frying

Steps

  1. In a large mixing bowl, combine the grated zucchini, grated carrot, corn kernels, red bell pepper, and green onions.
  2. Add the all-purpose flour, chickpea flour, egg, garlic powder, cumin powder, salt, and black pepper to the vegetable mixture. Mix well until fully combined.
  3. Heat a non-stick skillet over medium heat and add a thin layer of olive oil.
  4. Once the oil is hot, drop spoonfuls of the vegetable mixture into the skillet, flattening them slightly with the back of the spoon.
  5. Cook for about 3-4 minutes on each side or until golden brown and crispy. Adjust the heat as needed to prevent burning.
  6. Remove the fritters from the skillet and place them on a paper towel to absorb excess oil.
  7. Serve warm with your favorite dipping sauce, such as tzatziki or a spicy aioli.
