- Zucchini - 100 grams, grated
- Carrot - 100 grams, grated
- Corn kernels - 50 grams
- Red bell pepper - 50 grams, finely chopped
- Green onions - 2, finely chopped
- All-purpose flour - 50 grams
- Chickpea flour - 30 grams
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - for frying
Steps
- In a large mixing bowl, combine the grated zucchini, grated carrot, corn kernels, red bell pepper, and green onions.
- Add the all-purpose flour, chickpea flour, egg, garlic powder, cumin powder, salt, and black pepper to the vegetable mixture. Mix well until fully combined.
- Heat a non-stick skillet over medium heat and add a thin layer of olive oil.
- Once the oil is hot, drop spoonfuls of the vegetable mixture into the skillet, flattening them slightly with the back of the spoon.
- Cook for about 3-4 minutes on each side or until golden brown and crispy. Adjust the heat as needed to prevent burning.
- Remove the fritters from the skillet and place them on a paper towel to absorb excess oil.
- Serve warm with your favorite dipping sauce, such as tzatziki or a spicy aioli.
