  • Red onion (chopped) - 1/4 medium
  • Tomato (chopped) - 1 medium
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Grated cheese (optional, such as cheddar or feta) - 30 g

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
  3. In an oven-safe skillet, heat the olive oil over medium heat. Add the chopped red onion and bell pepper, sautéing for about 3-4 minutes until softened.
