- Corn (fresh or frozen) - 1 cup
- Black Beans - 1 cup, drained and rinsed
- Olive Oil - 2 tablespoons
- Fajita Seasoning - 2 teaspoons
- Cooked Rice (white or brown) - 1 cup
- Avocado - 1 medium, sliced
- Lime - 1, juiced
- Cilantro - 1/4 cup, chopped

- Sour Cream or Greek Yogurt - 1/4 cup (optional)
Steps
- Heat olive oil in a large skillet over medium-high heat.
- Add the sliced bell peppers, red onion, and zucchini to the skillet and sauté for about 5-7 minutes until they start to soften.
- Stir in the corn, black beans, fajita seasoning, salt, and pepper, and cook for another 5 minutes until heated through.
- While the vegetables are cooking, prepare the rice according to package instructions if not already cooked.
- Once the vegetables are ready, remove from heat and stir in the lime juice and chopped cilantro.
