Ingredients

  • Bell Pepper (mixed colors) - 1 cup, sliced
  • Red Onion - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Corn (fresh or frozen) - 1 cup
  • Black Beans - 1 cup, drained and rinsed
  • Olive Oil - 2 tablespoons
  • Fajita Seasoning - 2 teaspoons
  • Cooked Rice (white or brown) - 1 cup
  • Avocado - 1 medium, sliced
  • Lime - 1, juiced
  • Cilantro - 1/4 cup, chopped
  • Salt - to taste
  • Pepper - to taste
  • Sour Cream or Greek Yogurt - 1/4 cup (optional)

Steps

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sliced bell peppers, red onion, and zucchini to the skillet and sauté for about 5-7 minutes until they start to soften.
  3. Stir in the corn, black beans, fajita seasoning, salt, and pepper, and cook for another 5 minutes until heated through.
  4. While the vegetables are cooking, prepare the rice according to package instructions if not already cooked.
  5. Once the vegetables are ready, remove from heat and stir in the lime juice and chopped cilantro.
  6. To assemble, place a scoop of cooked rice in each bowl, top with the sautéed vegetable mixture, and add slices of avocado.
