- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Carrot - 1 medium, sliced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Cauliflower - 1 cup, florets
- Canned diced tomatoes - 400 grams
- Coconut milk - 200 ml
- Curry powder - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - for garnish
Steps
- Rinse the brown rice under cold water and then combine it with 2 cups of water in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes or until the water is absorbed and rice is tender.
- While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
