Steps
- In a medium saucepan, bring the vegetable broth to a boil.
- Add the couscous to the boiling broth, stir, cover, and remove from heat. Let it sit for 5 minutes.
- In a large skillet, heat olive oil over medium heat. Add the diced red onion and minced garlic, sautéing for 2-3 minutes until softened.
- Add the diced red bell pepper, zucchini, and carrot to the skillet, cooking for an additional 5-7 minutes until the vegetables are tender.
- Stir in the cherry tomatoes, cumin, paprika, salt, and black pepper. Cook for another 2-3 minutes until the tomatoes soften.
- Fluff the couscous with a fork and add it to the skillet with the vegetables. Mix well to combine.
- Remove from heat, stir in the fresh parsley and lemon juice, and serve warm.
