  • Carrot - 1, diced

  • Garlic - 2 cloves, minced
  • Cherry tomatoes - 1 cup, halved
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium saucepan, bring the vegetable broth to a boil.
  2. Add the couscous to the boiling broth, stir, cover, and remove from heat. Let it sit for 5 minutes.
  3. In a large skillet, heat olive oil over medium heat. Add the diced red onion and minced garlic, sautéing for 2-3 minutes until softened.
  4. Add the diced red bell pepper, zucchini, and carrot to the skillet, cooking for an additional 5-7 minutes until the vegetables are tender.
  5. Stir in the cherry tomatoes, cumin, paprika, salt, and black pepper. Cook for another 2-3 minutes until the tomatoes soften.
  6. Fluff the couscous with a fork and add it to the skillet with the vegetables. Mix well to combine.
  7. Remove from heat, stir in the fresh parsley and lemon juice, and serve warm.
