  • Carrot, diced - 1 medium
  • Celery, diced - 1 stalk
  • Potato, peeled and cubed - 1 medium
  • Corn kernels - 1 cup (fresh or frozen)
  • Zucchini, diced - 1 small
  • Vegetable broth - 2 cups
  • Milk (or plant-based milk) - 1 cup
  • Thyme, dried - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Green onions, sliced - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
