- Green beans - 100 grams, trimmed and cut into 2-inch pieces
- Tomato paste - 2 tablespoons
- Vegetable broth - 500 ml
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add diced potatoes, carrots, and zucchini to the pot, stirring to combine with the onions and garlic.
- Stir in the green beans and tomato paste, mixing well to coat the vegetables.
- Pour in the vegetable broth and add cumin, paprika, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 60 minutes, stirring occasionally.
- After 60 minutes, check the vegetables for tenderness. If needed, continue to simmer for an additional 15-30 minutes.
- Serve hot, garnished with fresh parsley.
