  • Green beans - 100 grams, trimmed and cut into 2-inch pieces
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 500 ml
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  2. Add diced potatoes, carrots, and zucchini to the pot, stirring to combine with the onions and garlic.
  3. Stir in the green beans and tomato paste, mixing well to coat the vegetables.
  4. Pour in the vegetable broth and add cumin, paprika, salt, and black pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 60 minutes, stirring occasionally.
  6. After 60 minutes, check the vegetables for tenderness. If needed, continue to simmer for an additional 15-30 minutes.
  7. Serve hot, garnished with fresh parsley.
