- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, diced
- Carrot - 1 medium, grated
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Spinach - 100 grams, fresh
- Mushrooms - 100 grams, sliced
- Olive oil - 2 tablespoons
- Vegetable broth - 100 ml
- Heavy cream - 100 ml
- Cheddar cheese - 100 grams, shredded
- Breadcrumbs - 30 grams
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until translucent.
- Add the sliced zucchini, diced bell pepper, grated carrot, and sliced mushrooms to the skillet. Cook for about 5-7 minutes, until the vegetables are tender.
- Stir in the fresh spinach, vegetable broth, heavy cream, dried oregano, salt, and black pepper. Cook for another 2-3 minutes until the spinach wilts.
- Transfer the vegetable mixture into a greased 1.5-liter baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
- In a small bowl, mix the breadcrumbs with a drizzle of olive oil and a pinch of salt. Sprinkle the breadcrumb mixture over the cheese layer.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
- Let it cool for a few minutes before serving.
