Ingredients

  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, diced
  • Carrot - 1 medium, grated
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Spinach - 100 grams, fresh
  • Mushrooms - 100 grams, sliced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 100 ml
  • Heavy cream - 100 ml
  • Cheddar cheese - 100 grams, shredded
  • Breadcrumbs - 30 grams
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until translucent.
  3. Add the sliced zucchini, diced bell pepper, grated carrot, and sliced mushrooms to the skillet. Cook for about 5-7 minutes, until the vegetables are tender.
  4. Stir in the fresh spinach, vegetable broth, heavy cream, dried oregano, salt, and black pepper. Cook for another 2-3 minutes until the spinach wilts.
  5. Transfer the vegetable mixture into a greased 1.5-liter baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
  6. In a small bowl, mix the breadcrumbs with a drizzle of olive oil and a pinch of salt. Sprinkle the breadcrumb mixture over the cheese layer.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and bubbly.
  8. Let it cool for a few minutes before serving.
