  • Baby potatoes - 300 grams
  • Bell pepper (any color) - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Wash the baby potatoes and cut them into small cubes.
  2. In a pot, boil the cubed potatoes in salted water for about 10 minutes until slightly tender, then drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced red onion and cook until it starts to soften, about 3 minutes.
