Ingredients

  • Firm tofu - 200 grams
  • Broccoli florets - 100 grams
  • Bell pepper (any color) - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Snow peas - 100 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 2 tablespoons
  • Peanut butter - 3 tablespoons
  • Coconut milk - 100 ml
  • Lime juice - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Sesame seeds - 1 tablespoon (for garnish)
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Press the tofu for 15 minutes to remove excess moisture, then cut it into cubes.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the tofu cubes and stir-fry until golden brown on all sides, about 5-7 minutes. Remove and set aside.
  4. In the same skillet, add garlic and ginger, stir-frying for about 30 seconds until fragrant.
  5. Add broccoli, bell pepper, carrot, and snow peas to the skillet, cooking for about 4-5 minutes until vegetables are tender-crisp.
  6. In a small bowl, combine peanut butter, soy sauce, coconut milk, and lime juice, mixing until smooth.
  7. Return the cooked tofu to the skillet and pour the peanut sauce over the stir-fry, tossing to coat evenly.
  8. Cook for another 2-3 minutes until heated through.
  9. Serve hot, garnished with sesame seeds and fresh cilantro.
