Ingredients

  • Firm tofu - 200 grams, cubed
  • Broccoli florets - 100 grams
  • Bell pepper (any color) - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Snow peas - 50 grams
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 tablespoon, grated
  • Soy sauce - 2 tablespoons
  • Honey or maple syrup - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Cornstarch - 1 teaspoon
  • Water - 2 tablespoons
  • Sesame seeds - 1 teaspoon, for garnish
  • Green onions - 1, chopped, for garnish

Steps

  1. Press the tofu between paper towels to remove excess moisture, then cube it into bite-sized pieces.
  2. In a small bowl, mix together soy sauce, honey (or maple syrup), grated ginger, cornstarch, and water to create the ginger sauce. Set aside.
  3. Heat olive oil in a large non-stick skillet or wok over medium-high heat. Add the cubed tofu and sauté until golden brown on all sides, about 5-7 minutes.
  4. Add minced garlic, broccoli, bell pepper, carrot, and snow peas to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  5. Pour the ginger sauce over the stir-fried vegetables and tofu. Stir well to coat everything evenly and cook for an additional 2 minutes until the sauce thickens slightly.
  6. Drizzle with sesame oil and toss to combine. Remove from heat.
  7. Serve hot, garnished with sesame seeds and chopped green onions.
