Ingredients
- Firm tofu - 200 grams, cubed
- Broccoli florets - 100 grams
- Bell pepper (any color) - 1 medium, sliced
- Carrot - 1 medium, julienned
- Snow peas - 50 grams
- Garlic - 2 cloves, minced
- Fresh ginger - 1 tablespoon, grated
- Soy sauce - 2 tablespoons
- Honey or maple syrup - 1 tablespoon
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Cornstarch - 1 teaspoon
- Water - 2 tablespoons
- Sesame seeds - 1 teaspoon, for garnish
- Green onions - 1, chopped, for garnish
Steps
- Press the tofu between paper towels to remove excess moisture, then cube it into bite-sized pieces.
- In a small bowl, mix together soy sauce, honey (or maple syrup), grated ginger, cornstarch, and water to create the ginger sauce. Set aside.
- Heat olive oil in a large non-stick skillet or wok over medium-high heat. Add the cubed tofu and sauté until golden brown on all sides, about 5-7 minutes.
- Add minced garlic, broccoli, bell pepper, carrot, and snow peas to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
- Pour the ginger sauce over the stir-fried vegetables and tofu. Stir well to coat everything evenly and cook for an additional 2 minutes until the sauce thickens slightly.
- Drizzle with sesame oil and toss to combine. Remove from heat.
- Serve hot, garnished with sesame seeds and chopped green onions.
