Ingredients

  • Basmati rice - 1 cup
  • Vegetable broth - 2 cups
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes. Drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic, diced carrot, zucchini, and red bell pepper to the saucepan. Cook for an additional 5-7 minutes, stirring occasionally, until the vegetables are slightly softened.
  4. Stir in the cumin, paprika, salt, and black pepper, and cook for another minute until fragrant.
  5. Add the drained rice to the saucepan and stir to combine with the vegetables.
  6. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  7. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and stir in the chopped parsley before serving.
