- Quinoa - 1 cup (170g)
- Water - 2 cups (480ml)
- Chickpeas (canned, drained and rinsed) - 1 cup (240g)
- Cucumber (diced) - 1 small (150g)
- Cherry tomatoes (halved) - 1 cup (150g)
- Red bell pepper (diced) - 1/2 medium (75g)
- Red onion (finely chopped) - 1/4 medium (25g)
- Fresh parsley (chopped) - 1/4 cup (15g)
- Olive oil - 2 tablespoons (30ml)
- Lemon juice - 2 tablespoons (30ml)
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
- Feta cheese (crumbled, optional) - 1/4 cup (40g)
Steps
- Rinse the quinoa under cold water in a fine mesh strainer to remove any bitterness.
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the water is absorbed and the quinoa is fluffy.
- Remove from heat and let it sit, covered, for an additional 5 minutes. Fluff with a fork and let it cool.
- In a large bowl, combine the cooled quinoa, chickpeas, cucumber, cherry tomatoes, red bell pepper, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- Pour the dressing over the quinoa mixture and toss gently to combine.
- If desired, sprinkle feta cheese on top before serving.
- Serve chilled or at room temperature.
