- Quinoa - 1 cup
- Water - 2 cups
- Olive oil - 2 tablespoons
- Red bell pepper - 1, diced
- Zucchini - 1, diced
- Carrot - 1, diced
- Spinach - 2 cups, chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the quinoa under cold water and drain.
- In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and water is absorbed.
- While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add the diced red bell pepper, zucchini, and carrot. Sauté for about 5-7 minutes until the vegetables are tender.
- Add the minced garlic, cumin, paprika, salt, and black pepper to the skillet. Cook for another 2 minutes until the garlic is fragrant.
- Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
- Once the quinoa is ready, fluff it with a fork and add it to the vegetable mixture. Drizzle with lemon juice and toss everything together until well combined.
- Serve warm, garnished with fresh parsley.
