Ingredients

  • Quinoa - 1 cup
  • Water - 2 cups
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Zucchini - 1, diced
  • Carrot - 1, diced
  • Spinach - 2 cups, chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the quinoa under cold water and drain.
  2. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and water is absorbed.
  3. While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add the diced red bell pepper, zucchini, and carrot. Sauté for about 5-7 minutes until the vegetables are tender.
  4. Add the minced garlic, cumin, paprika, salt, and black pepper to the skillet. Cook for another 2 minutes until the garlic is fragrant.
  5. Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
  6. Once the quinoa is ready, fluff it with a fork and add it to the vegetable mixture. Drizzle with lemon juice and toss everything together until well combined.
  7. Serve warm, garnished with fresh parsley.
