  • Cucumber - 1/2, diced
  • Red onion - 1/4, thinly sliced
  • Fresh spinach - 1 cup, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Hummus - 4 tablespoons

Steps

  1. In a skillet, heat the olive oil over medium heat and add minced garlic, cooking until fragrant, about 1 minute.
  2. Add the diced red bell pepper, grated carrot, and sliced red onion to the skillet. Sauté for 5-7 minutes until the vegetables are softened.
  3. Stir in the cooked lentils, ground cumin, salt, and black pepper, and cook for another 3-5 minutes until heated through.
  4. Remove the skillet from heat and add the chopped spinach and lemon juice, mixing until the spinach wilts slightly.
  5. Spread 2 tablespoons of hummus on each tortilla.
  6. Divide the lentil and vegetable mixture evenly between the tortillas and top with diced cucumber.
  7. Wrap the tortillas tightly, slice in half if desired, and serve immediately.
