- Lentils (cooked) - 150 grams
- Bell pepper (chopped) - 1 medium
- Carrot (sliced) - 1 medium
- Zucchini (sliced) - 1 medium
- Broccoli florets - 100 grams
- Garlic (minced) - 2 cloves
- Soy sauce (low sodium) - 3 tablespoons
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground black pepper - 1/2 teaspoon
- Salt - to taste
- Green onions (sliced) - 2 for garnish
- Sesame seeds - 1 tablespoon for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a large pot, cook the whole wheat noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the chopped bell pepper, sliced carrot, zucchini, and broccoli florets to the skillet. Stir-fry for about 5-7 minutes until vegetables are tender.
- Stir in the cooked lentils, soy sauce, ground cumin, black pepper, and salt. Mix well and cook for an additional 2-3 minutes.
- In a large mixing bowl, combine the cooked noodles with the vegetable-lentil mixture. Toss until everything is evenly coated.
- Transfer the mixture to a baking dish, spreading it evenly.
- Bake in the preheated oven for 10-15 minutes until heated through.
