Ingredients

  • Whole wheat noodles - 200 grams
  • Green lentils - 100 grams, uncooked
  • Olive oil - 2 tablespoons
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 3 tablespoons
  • Vegetable broth - 250 ml
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a pot, cook the green lentils in boiling water for about 20 minutes or until tender, then drain and set aside.
  3. Cook the whole wheat noodles according to package instructions, drain, and set aside.
  4. In a large skillet, heat the olive oil over medium heat, then add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  5. Add the diced carrots, bell pepper, and zucchini to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
  6. Stir in the cooked lentils, soy sauce, vegetable broth, cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes to allow the flavors to meld.
  7. In a large mixing bowl, combine the cooked noodles with the vegetable and lentil mixture until well combined.
  8. Transfer the mixture to a greased baking dish and spread it evenly.
  9. Bake in the preheated oven for 15 minutes, or until heated through and slightly golden on top.
  10. Remove from the oven and sprinkle with fresh parsley before serving.
