- Whole wheat noodles - 200 grams
- Green lentils - 100 grams, uncooked
- Olive oil - 2 tablespoons
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Soy sauce - 3 tablespoons
- Vegetable broth - 250 ml
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a pot, cook the green lentils in boiling water for about 20 minutes or until tender, then drain and set aside.
- Cook the whole wheat noodles according to package instructions, drain, and set aside.
- In a large skillet, heat the olive oil over medium heat, then add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the diced carrots, bell pepper, and zucchini to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
- Stir in the cooked lentils, soy sauce, vegetable broth, cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes to allow the flavors to meld.
- In a large mixing bowl, combine the cooked noodles with the vegetable and lentil mixture until well combined.
- Transfer the mixture to a greased baking dish and spread it evenly.
- Bake in the preheated oven for 15 minutes, or until heated through and slightly golden on top.
- Remove from the oven and sprinkle with fresh parsley before serving.
