Ingredients

  • Whole grain spaghetti - 150 grams
  • Red lentils - 100 grams
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Broccoli florets - 100 grams
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, chopped
  • Soy sauce - 3 tablespoons
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 500 ml
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a medium pot, bring 500 ml of water to a boil. Add the red lentils and cook for about 15 minutes until tender. Drain and set aside.
  3. Cook the whole grain spaghetti according to package instructions, drain, and set aside.
  4. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  5. Add the diced carrot, bell pepper, and broccoli florets to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender.
  6. Stir in the cooked lentils, soy sauce, cumin, paprika, salt, and black pepper. Mix well to combine all the ingredients.
  7. In a large mixing bowl, combine the cooked spaghetti with the vegetable-lentil mixture. Mix thoroughly until the noodles are evenly coated.
  8. Transfer the mixture to a baking dish and spread it evenly.
  9. Bake in the preheated oven for 10 minutes.
  10. Remove from the oven and garnish with fresh parsley before serving.
