- Whole grain spaghetti - 150 grams
- Red lentils - 100 grams
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Broccoli florets - 100 grams
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Soy sauce - 3 tablespoons
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 500 ml
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a medium pot, bring 500 ml of water to a boil. Add the red lentils and cook for about 15 minutes until tender. Drain and set aside.
- Cook the whole grain spaghetti according to package instructions, drain, and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the diced carrot, bell pepper, and broccoli florets to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender.
- Stir in the cooked lentils, soy sauce, cumin, paprika, salt, and black pepper. Mix well to combine all the ingredients.
- In a large mixing bowl, combine the cooked spaghetti with the vegetable-lentil mixture. Mix thoroughly until the noodles are evenly coated.
- Transfer the mixture to a baking dish and spread it evenly.
- Bake in the preheated oven for 10 minutes.
- Remove from the oven and garnish with fresh parsley before serving.
