- Green lentils - 100 grams

- Red bell pepper - 1 medium, sliced
- Carrot - 1 medium, julienned
- Broccoli - 100 grams, cut into florets
- Zucchini - 1 medium, sliced
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Fresh ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Black pepper - to taste
- Sesame seeds - 1 tablespoon (optional)
Steps
- Rinse the green lentils under cold water and cook them in a pot with 300 ml of water for about 20 minutes or until tender. Drain and set aside.
- While the lentils are cooking, heat the olive oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and grated ginger to the skillet, sautéing for 1 minute until fragrant.
- Add the sliced red bell pepper, julienned carrot, and broccoli florets to the skillet. Stir-fry for about 5 minutes until the vegetables start to soften.
