- onion, diced - 1 medium
- garlic, minced - 2 cloves
- carrot, diced - 1 medium
- celery, diced - 1 stalk
- bell pepper, diced - 1/2 medium
- canned diced tomatoes - 400 grams
- vegetable broth - 500 milliliters
- red lentils - 100 grams
- chickpeas, canned and drained - 1 cup
- peas, frozen - 1/2 cup
- spinach, fresh - 2 cups
- cumin powder - 1 teaspoon
- thyme, dried - 1 teaspoon
- salt - to taste
- black pepper - to taste
- lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- Add the diced carrot, celery, and bell pepper to the pot, cooking for an additional 5 minutes until the vegetables start to soften.
- Stir in the canned diced tomatoes, vegetable broth, red lentils, cumin, thyme, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and let it simmer for about 15 minutes, or until the lentils are tender.
- Add the chickpeas, frozen peas, and fresh spinach to the pot. Stir well and cook for another 5 minutes until the spinach wilts and the peas are heated through.
