  • olive oil - 2 tablespoons
  • onion, diced - 1 medium
  • garlic, minced - 2 cloves
  • carrot, diced - 1 medium
  • celery, diced - 1 stalk
  • bell pepper, diced - 1/2 medium
  • canned diced tomatoes - 400 grams
  • vegetable broth - 500 milliliters
  • red lentils - 100 grams
  • chickpeas, canned and drained - 1 cup
  • peas, frozen - 1/2 cup
  • spinach, fresh - 2 cups
  • cumin powder - 1 teaspoon
  • thyme, dried - 1 teaspoon
  • salt - to taste
  • black pepper - to taste
  • lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  2. Add the diced carrot, celery, and bell pepper to the pot, cooking for an additional 5 minutes until the vegetables start to soften.
