- Red bell pepper - 1 medium, diced
- Red onion - 1/4 medium, finely chopped
- Fresh parsley - 1/4 cup, chopped
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 1 clove, minced

- Black pepper - 1/4 teaspoon
Steps
- Rinse the quinoa and brown rice under cold water, then combine them with 1.5 cups of water in a pot. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
- In a separate pot, combine the green lentils with 2 cups of water. Bring to a boil, reduce heat, and simmer for about 20-25 minutes until tender. Drain any excess water and set aside.
- In a large mixing bowl, combine the cooked quinoa, brown rice, lentils, chickpeas, cucumber, cherry tomatoes, red bell pepper, red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper. Pour this dressing over the salad and toss gently to combine all ingredients evenly.
