- Quinoa - 1/2 cup (90g)
- Green or brown lentils - 1/2 cup (100g)
- Cucumber - 1 small, diced
- Cherry tomatoes - 1 cup, halved
- Red bell pepper - 1 medium, diced
- Red onion - 1/4 medium, finely chopped
- Fresh parsley - 1/4 cup, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 1/4 cup, crumbled (optional)
Steps
- Rinse the quinoa under cold water. In a medium saucepan, combine 1/2 cup quinoa and 1 cup water. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until water is absorbed. Remove from heat and let it sit, covered, for 5 minutes, then fluff with a fork.
- While the quinoa is cooking, rinse the lentils. In a separate saucepan, combine 1/2 cup lentils with 2 cups water. Bring to a boil, then reduce to a simmer and cook uncovered for about 20 minutes or until tender. Drain and set aside.
- In a large mixing bowl, combine the cooked quinoa, lentils, diced cucumber, halved cherry tomatoes, diced red bell pepper, chopped red onion, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper. Pour the dressing over the salad and toss to combine.
- If desired, sprinkle crumbled feta cheese on top before serving. Serve the salad chilled or at room temperature.
