- Green lentils - 100 grams
- Cherry tomatoes - 150 grams, halved
- Cucumber - 1 medium, diced
- Red bell pepper - 1, diced
- Red onion - 1 small, finely chopped
- Fresh parsley - 20 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the green lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil, reduce heat, and simmer for about 20 minutes, or until tender but not mushy.
- While the lentils are cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and red bell pepper, and finely chop the red onion and parsley.
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper to create the dressing.
- Once the lentils are cooked, drain any excess water and allow them to cool slightly.
- In a large mixing bowl, combine the cooked lentils, cherry tomatoes, cucumber, red bell pepper, red onion, and parsley.
- Pour the lemon dressing over the salad and toss gently to combine all ingredients well.
- Serve chilled or at room temperature.
