  • Green lentils - 100 grams
  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1, diced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 20 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the green lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil, reduce heat, and simmer for about 20 minutes, or until tender but not mushy.
  2. While the lentils are cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and red bell pepper, and finely chop the red onion and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper to create the dressing.
  4. Once the lentils are cooked, drain any excess water and allow them to cool slightly.
  5. In a large mixing bowl, combine the cooked lentils, cherry tomatoes, cucumber, red bell pepper, red onion, and parsley.
  6. Pour the lemon dressing over the salad and toss gently to combine all ingredients well.
  7. Serve chilled or at room temperature.
