Ingredients

  • Green lentils - 100 grams
  • Red bell pepper - 1, diced
  • Cucumber - 1, diced
  • Cherry tomatoes - 150 grams, halved
  • Carrot - 1, grated
  • Red onion - 1/4, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Rinse the lentils under cold water and then place them in a pot with 300 ml of water. Bring to a boil, reduce heat, and simmer for about 20 minutes or until tender. Drain and set aside.
  2. While the lentils are cooking, prepare the vegetables. Dice the red bell pepper, cucumber, and halve the cherry tomatoes. Grate the carrot and finely chop the red onion.
  3. In a large mixing bowl, combine the cooked lentils, diced vegetables, and chopped parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, black pepper, cumin, and paprika until well combined.
  5. Pour the dressing over the lentil and vegetable mixture and toss gently to coat all ingredients evenly.
  6. If using, sprinkle crumbled feta cheese on top before serving.
  7. Divide the salad into two bowls and enjoy fresh.
