Ingredients
- Green lentils - 100 grams
- Red bell pepper - 1, diced
- Cucumber - 1, diced
- Cherry tomatoes - 150 grams, halved
- Carrot - 1, grated
- Red onion - 1/4, finely chopped
- Fresh parsley - 30 grams, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Dijon mustard - 1 teaspoon
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Rinse the lentils under cold water and then place them in a pot with 300 ml of water. Bring to a boil, reduce heat, and simmer for about 20 minutes or until tender. Drain and set aside.
- While the lentils are cooking, prepare the vegetables. Dice the red bell pepper, cucumber, and halve the cherry tomatoes. Grate the carrot and finely chop the red onion.
- In a large mixing bowl, combine the cooked lentils, diced vegetables, and chopped parsley.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, black pepper, cumin, and paprika until well combined.
- Pour the dressing over the lentil and vegetable mixture and toss gently to coat all ingredients evenly.
- If using, sprinkle crumbled feta cheese on top before serving.
- Divide the salad into two bowls and enjoy fresh.
