Ingredients

  • Green lentils - 100 grams
  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1, diced
  • Red onion - 1/4, finely chopped
  • Carrot - 1 medium, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the green lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil, then reduce heat and simmer for about 20 minutes or until tender. Drain and set aside to cool.
  2. While the lentils are cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and red bell pepper, finely chop the red onion, and grate the carrot.
  3. In a large mixing bowl, combine the cooked lentils, cherry tomatoes, cucumber, red bell pepper, red onion, carrot, and fresh parsley. Toss gently to mix.
  4. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and black pepper until well combined.
  5. Drizzle the dressing over the salad and toss again to ensure everything is evenly coated. Adjust seasoning to taste.
  6. Serve the salad in bowls, garnished with additional parsley if desired.
