- Green lentils - 100 grams
- Cherry tomatoes - 150 grams, halved
- Cucumber - 1 medium, diced
- Red bell pepper - 1, diced
- Red onion - 1/4, finely chopped
- Carrot - 1 medium, grated
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Dijon mustard - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Rinse the green lentils under cold water and place them in a pot with 300 ml of water. Bring to a boil, then reduce heat and simmer for about 20 minutes or until tender. Drain and set aside to cool.
- While the lentils are cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and red bell pepper, finely chop the red onion, and grate the carrot.
- In a large mixing bowl, combine the cooked lentils, cherry tomatoes, cucumber, red bell pepper, red onion, carrot, and fresh parsley. Toss gently to mix.
- In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and black pepper until well combined.
- Drizzle the dressing over the salad and toss again to ensure everything is evenly coated. Adjust seasoning to taste.
- Serve the salad in bowls, garnished with additional parsley if desired.
