Ingredients

  • Brown lentils - 100 grams
  • Water - 500 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 small, diced
  • Vegetable broth - 250 ml
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the brown lentils under cold water and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
  3. Add the minced garlic and diced bell pepper, cooking for another 2 minutes until fragrant.
  4. Stir in the zucchini, cumin, coriander, paprika, salt, and black pepper, cooking for an additional 2 minutes.
  5. Add the rinsed lentils and vegetable broth to the saucepan, bringing the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 25 minutes or until the lentils are tender and have absorbed most of the liquid.
  7. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
  8. Garnish with fresh parsley before serving.
