  • Whole wheat noodles - 150 grams
  • Red lentils - 100 grams
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Carrot - 1 medium, shredded
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Soy sauce - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).

  5. Add the diced zucchini, bell pepper, and shredded carrot to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
  6. Stir in the cooked lentils, soy sauce, oregano, black pepper, and salt. Mix well and cook for an additional 2-3 minutes to combine flavors.
  7. In a large mixing bowl, combine the cooked noodles and the vegetable-lentil mixture. Mix thoroughly to ensure everything is evenly distributed.
  8. Transfer the noodle mixture to a greased casserole dish. Top with grated cheddar cheese.
  9. Bake in the preheated oven for 15-20 minutes until the cheese is melted and bubbly.
