  • Whole wheat noodles - 150 grams
  • Green lentils - 100 grams
  • Red bell pepper - 1, diced
  • Carrot - 1, grated
  • Zucchini - 1, diced
  • Spinach - 100 grams, fresh
  • Onion - 1, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cheddar cheese - 100 grams, shredded
  • Parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cook the whole wheat noodles according to package instructions until al dente, then drain and set aside.
  3. In a saucepan, cook the green lentils in boiling water for about 20 minutes or until tender, then drain and set aside.
  4. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  5. Add the diced red bell pepper, grated carrot, and diced zucchini to the skillet. Cook for about 5-7 minutes until the vegetables are softened.
  6. Stir in the fresh spinach and cooked lentils, cooking until the spinach wilts.
  7. Season the mixture with soy sauce, cumin, paprika, salt, and black pepper. Mix well to combine.
  8. In a large mixing bowl, combine the cooked noodles with the vegetable-lentil mixture.
  9. Transfer the combined mixture to a greased baking dish. Sprinkle the shredded cheddar cheese evenly on top.
  10. Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly.
