Steps
- Preheat the oven to 180°C (350°F).
- Cook the whole wheat noodles according to package instructions until al dente, then drain and set aside.
- In a saucepan, cook the green lentils in boiling water for about 20 minutes or until tender, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the diced red bell pepper, grated carrot, and diced zucchini to the skillet. Cook for about 5-7 minutes until the vegetables are softened.
- Stir in the fresh spinach and cooked lentils, cooking until the spinach wilts.
- Season the mixture with soy sauce, cumin, paprika, salt, and black pepper. Mix well to combine.
- In a large mixing bowl, combine the cooked noodles with the vegetable-lentil mixture.
- Transfer the combined mixture to a greased baking dish. Sprinkle the shredded cheddar cheese evenly on top.
