Ingredients

  • Whole wheat noodles - 150 grams
  • Red lentils - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Spinach - 100 grams, fresh
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 300 ml
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cheese (optional, Halal) - 50 grams, grated

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Cook the whole wheat noodles according to package instructions, drain, and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until the onion becomes translucent.
  4. Add diced carrot, bell pepper, and zucchini to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
  5. Stir in the red lentils, vegetable broth, tomato paste, cumin powder, paprika, salt, and black pepper. Bring to a boil, then reduce heat and let it simmer for 15 minutes until lentils are cooked through.
  6. Add fresh spinach to the mixture and stir until wilted.
  7. In a baking dish, combine the cooked noodles and the lentil-vegetable mixture. Mix well to combine.
  8. If using, sprinkle grated cheese over the top of the noodle mixture.
  9. Bake in the preheated oven for 10-15 minutes until heated through and the cheese (if used) is melted and bubbly.
  10. Remove from the oven, let cool slightly, and serve warm.
