Ingredients

  • Brown lentils - 1 cup
  • Basmati rice - 1 cup
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Coconut milk - 1 cup
  • Vegetable broth - 1 cup
  • Curry powder - 2 teaspoons
  • Cumin - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the brown lentils under cold water and set aside.
  2. In a medium pot, bring 2 cups of water to a boil. Add the basmati rice, reduce the heat to low, cover, and simmer for about 15 minutes until the rice is cooked and water is absorbed.
  3. While the rice cooks, heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  4. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  5. Add the diced carrot, bell pepper, and zucchini to the skillet, and cook for about 5-7 minutes until they begin to soften.
  6. Stir in the curry powder, cumin, and turmeric, cooking for another minute to toast the spices.
  7. Add the rinsed lentils, vegetable broth, and coconut milk to the skillet. Bring to a gentle simmer and cook for 15-20 minutes, or until the lentils are tender and the mixture thickens. Season with salt and black pepper to taste.
  8. Once the rice and curry are ready, serve the curry over the rice in bowls. Garnish with fresh cilantro before serving.
