Ingredients
- Brown lentils - 1 cup
- Basmati rice - 1 cup
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Coconut milk - 1 cup
- Vegetable broth - 1 cup
- Curry powder - 2 teaspoons
- Cumin - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Rinse the brown lentils under cold water and set aside.
- In a medium pot, bring 2 cups of water to a boil. Add the basmati rice, reduce the heat to low, cover, and simmer for about 15 minutes until the rice is cooked and water is absorbed.
- While the rice cooks, heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Add the diced carrot, bell pepper, and zucchini to the skillet, and cook for about 5-7 minutes until they begin to soften.
- Stir in the curry powder, cumin, and turmeric, cooking for another minute to toast the spices.
- Add the rinsed lentils, vegetable broth, and coconut milk to the skillet. Bring to a gentle simmer and cook for 15-20 minutes, or until the lentils are tender and the mixture thickens. Season with salt and black pepper to taste.
- Once the rice and curry are ready, serve the curry over the rice in bowls. Garnish with fresh cilantro before serving.
