- Green lentils - 100 grams
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Bell pepper (any color) - 1 medium, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Vegetable broth - 250 ml
- Olive oil - 2 tablespoons
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Breadcrumbs - 50 grams
- Grated cheese (optional, Halal) - 50 grams
Steps
- Preheat the oven to 180°C (350°F).
- Rinse the lentils under cold water and then cook them in a saucepan with vegetable broth for about 20 minutes, or until tender. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until the onion becomes translucent.
- Add diced carrot, zucchini, and bell pepper to the skillet. Cook for another 5-7 minutes until the vegetables are slightly softened.
- Stir in the cooked lentils, tomato paste, oregano, thyme, salt, and black pepper. Mix well and let it cook for another 2-3 minutes.
- Transfer the lentil and vegetable mixture into a baking dish, spreading it evenly.
- In a bowl, mix breadcrumbs with grated cheese (if using). Sprinkle this mixture evenly over the top of the vegetable and lentil bake.
- Bake in the preheated oven for 20 minutes, or until the top is golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
