Ingredients

  • Green lentils - 100 grams
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Bell pepper (any color) - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 250 ml
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Breadcrumbs - 50 grams
  • Grated cheese (optional, Halal) - 50 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Rinse the lentils under cold water and then cook them in a saucepan with vegetable broth for about 20 minutes, or until tender. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until the onion becomes translucent.
  4. Add diced carrot, zucchini, and bell pepper to the skillet. Cook for another 5-7 minutes until the vegetables are slightly softened.
  5. Stir in the cooked lentils, tomato paste, oregano, thyme, salt, and black pepper. Mix well and let it cook for another 2-3 minutes.
  6. Transfer the lentil and vegetable mixture into a baking dish, spreading it evenly.
  7. In a bowl, mix breadcrumbs with grated cheese (if using). Sprinkle this mixture evenly over the top of the vegetable and lentil bake.
  8. Bake in the preheated oven for 20 minutes, or until the top is golden brown.
  9. Remove from the oven and let it cool for a few minutes before serving.
