Ingredients

  • Whole wheat tortilla - 2 large (10-inch)
  • Hummus - 100 grams
  • Cucumber - 1 medium, sliced
  • Bell pepper - 1 medium, sliced (any color)
  • Carrot - 1 medium, shredded
  • Spinach - 1 cup, fresh
  • Red onion - 1/4 medium, thinly sliced
  • Feta cheese - 50 grams, crumbled (optional)
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a small bowl, mix the olive oil, lemon juice, salt, and black pepper to create a dressing.
  2. Lay out the whole wheat tortillas on a clean surface.
  3. Spread 50 grams of hummus evenly over each tortilla, leaving a small border around the edges.
  4. Layer the sliced cucumber, bell pepper, shredded carrot, spinach, and red onion on top of the hummus.
