- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Soy sauce - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Black pepper - ½ teaspoon
- Salt - ½ teaspoon (adjust to taste)
- Grated cheese (optional) - 50 grams
Steps
- Preheat the oven to 180°C (350°F).
- Cook the whole wheat noodles according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the diced bell pepper, zucchini, and carrot to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
