  • Cooked rice - 1 cup
  • Shredded mozzarella cheese - 1/2 cup
  • Chopped spinach - 1/2 cup
  • Diced bell pepper - 1/4 cup
  • Chopped onion - 1/4 cup
  • Minced garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dried oregano - 1/2 teaspoon
  • Grated Parmesan cheese - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat your oven to 375°F (190°C).
  2. Clean the portobello mushrooms and remove the stems, setting them aside for later use.
  3. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until softened, about 3-4 minutes.
