Ingredients

  • Large portobello mushrooms - 4 pieces
  • Cooked quinoa - 1 cup
  • Spinach, chopped - 1 cup
  • Red bell pepper, diced - 1/2 cup
  • Shallot, finely chopped - 1 small
  • Garlic, minced - 2 cloves
  • Cream cheese, softened - 100 grams
  • Parmesan cheese, grated - 50 grams
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Italian seasoning - 1/2 teaspoon
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Clean the portobello mushrooms and remove the stems carefully, setting the caps aside and finely chopping the stems.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the shallot and garlic, sautéing until translucent.
  4. Add the chopped mushroom stems, red bell pepper, and spinach to the skillet. Cook until the vegetables are softened, about 5 minutes.
  5. In a large bowl, combine the sautéed vegetables with the cooked quinoa, cream cheese, Parmesan cheese, salt, pepper, Italian seasoning, and fresh parsley. Mix well until evenly combined.
  6. Drizzle the remaining olive oil over the mushroom caps and season with a pinch of salt and pepper.
  7. Fill each mushroom cap generously with the quinoa and vegetable mixture, pressing down gently to pack it in.
  8. Place the stuffed mushrooms on a baking sheet and bake in the preheated oven for 20 minutes, or until the mushrooms are tender and the tops are golden.
  9. Remove from the oven and let cool for a few minutes before serving.
