Steps
- Preheat the oven to 180°C (350°F).
- Clean the portobello mushrooms and remove the stems carefully, setting the caps aside and finely chopping the stems.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the shallot and garlic, sautéing until translucent.
- Add the chopped mushroom stems, red bell pepper, and spinach to the skillet. Cook until the vegetables are softened, about 5 minutes.
- In a large bowl, combine the sautéed vegetables with the cooked quinoa, cream cheese, Parmesan cheese, salt, pepper, Italian seasoning, and fresh parsley. Mix well until evenly combined.
